Why Is Wagyu Beef So Expensive

Between the special breeds required and the immense amount of work that goes into raising them, Wagyu beef is understandably expensive. Specialty breeders raise Wagyu calves until theyre between seven to 10 months old, at which point theyll be sold to a farmer to raise them into adulthood. Wagyu calves can cost as much as $30,000, which is more than 10 times what a typical American beef cow can cost. Kobe beef is even more expensive, due to its scarcity.

Traditional Japanese Grill Method For Cooking Wagyu Steak:

Okay, were generalizing a bit because there are many, many traditional Japanese ways of preparing Wagyu. They range from eating thin strips raw by themselves, or in dishes like the slow-cooked one-pot meal sukiyaki or broth dishes like shabu-shabu. However, one of the most popular ways is on a communal flat grill or an iron pan heated over charcoal. The cooking method for both of these is very similar, and its what well go over below.

First things first – when we say grill, we mean more like a griddle. Not the thing you have hanging out on your porch. A traditional grill is NOT something we recommend using for cooking Wagyu, unless youre using it for indirect heat. This is because the fat content of Wagyu is much higher, and that means there is more grease lost when cooked over open flame. This is both much more likely to start a fire, and simply a waste of fantastic quality fat that should stay in your steak.

A great way to cook Wagyu using the Japanese method at home is to use a cast iron on the stovetop or over the grill, the flat grill plate on your grill if you have one, or if none of those options are available, a skillet that can reach high temps.

What Is The Lowest Grade Of Wagyu Beef

The Japanese beef grading system assigns a grade to Wagyu beef on a scale from 1 to 5, with 1 being the lowest quality and 5 representing the finest. Quality ratings vary from 1 to 12, and this number takes into account all of the elements weve discussed thus far, such as marbling and coloration, among others.

What You Need To Know About Wagyu

Theres a lot of confusion about the terms Wagyu and Kobe Beef especially.

Wagyu actually refers to four different types of Japanese cattle as the word literally means Japanese Cow. However, while the term can apply to any Japanese cow, outside of Japan, it exclusively refers to Kuroge Washu beef.

Wagyu beef is beef comes from the Japanese Kuroge Washu breed of cattle. The meat taken from Kuroge Washu is famous for its intense marbling and rich umami flavor.

The most common type of Wagyu you will find for sale is known as domestic or American Wagyu.

It comes from Kuroge Washu cattle exported from Japan between 1975 and 1997 which were crossbred with western breeds, like the Angus.

A tiny number of Fullblood Kuroge Washu animals have made it to the US, but they represent just 0.029% of domestic cattle, and their meat is almost as rare as Japanese imported Wagyu.

Japanese Wagyu is graded on a much stricter system than the USDA beef grading system, and its export is heavily tariffed.

Unlike American or Australian Wagyu, Japanese Kuroge Washu cattle are not interbred with other breeds. Their breeding is so heavily restricted that 99.9% of all Kuroge Washu breeding cows can trace their lineage to just one bull.

Kobe beef is considered the pinnacle of Wagyu beef. This beef is taken from cattle raised in the Hyogo prefecture and is a Japanese trademark.

So while the term American Wagyu is perfectly legitimate, the term American Kobe doesnt make any sense .

Where To Buy Japanese A5 Wagyu Beef

When it comes to beef and steaks there are good steaks, great steaks, and then there is Japanese A5 Wagyu beef. I wont get into a ton of the background info on Japanese A5 Wagyu beef but just know when it comes to beef the A5 Wagyu is the pinnacle. It is rare, hard to find, very expensive, and totally worth it if you get the chance to taste it. You will never find this type of beef at your grocery store or local butcher but I put together this list of where to buy Japanese A5 Wagyu Beef so you can try some of this amazing beef yourself.

    Breeding over generations has selected for cattle with more intra-muscular fat cells known as marbling. It provides the unique and delicious taste and tenderness for which Wagyu beef is known. Studies have also shown that the mono-unsaturated to saturated fat ratio is higher in Wagyu than in other beef. The saturated fat is does contain is also different. It contains 40% stearic acid, known to have little effect on raising cholesterol levels. This means you experience a more flavorful and tender steak that is also considerably healthier than American beef.

    How Is Wagyu Beef Raised

    The process of raising Wagyu or Kobe beef is almost the exact opposite of the way cows are raised in the industrial food system. Theyre given names and have just a few other cows in their paddock with them. If cows clash with each other, theyre moved to a different paddock.

    There are myths out there that classical music is played to them and that theyre treated to regular massages, but farmers do go out of their way to minimize the stress of the cows. Noise levels are controlled, and farmers constantly check in on their animals. While theyre not massaged, they do occasionally get a good brushing to relax them and increase their circulation.

    Its important to note here that Wagyu beef must be from the four recognized breeds: Kuroge , Aakage , Nihon Tankaku and Mukaku . Even if a cow is raised in the Wagyu manner, but not from these breeds or specifically called out as a cross-breed, like American Wagyu, it doesnt qualify as Wagyu.
