You can find drastic price cuts on certain models but will need to search for them in person as they are not advertised online.

When the steak is done cooking, kill the fire in the grill. To do this you need to close both the top and bottom valve. That will coke the fire eventually extinguishing the flame. It will take time for it to cool down this is generally when I eat. After about an hour of it cooling check on the grill. It should be cool, to test this tap the side lightly . If you can keep your grill outside in a permanent place such as a balcony or backyard you can reuse some of the charcoal. If you dont I pour some water on the coals to make sure the coals are not hot then I put them in a bag and dispose of them, than you can bring your grill inside.

Grill Conversion According To The Owners Manual

Prior to 2009, the WSM Owners Manual provided these instructions for converting the smoker into a charcoal grill:

  • Place the charcoal grate and charcoal chamber on the flanges in the middle cooking section, where the water pan normally sits.
  • Place the top cooking grate in its normal position.
  • Set aside the water pan and bottom cooking grate. You wont be needing these.

The distance between the charcoal grate and cooking grate is 8.5. Thats pretty goodbut not close enough if you really want to get a good sear on your steak.

Before doing anything check and confirm that all burner knobs are off by turning them counterclockwise. Now turn the supply of gas on and place your matchstick into its holder. Comparing Different Steak Cooking Times

Compare this to the really thick 3 inch filet mignon where I would let the steak rest for at least 30 minutes at room temperature and then use approximately 5 minutes of indirect cooking time per side after the standard 3 minute direct heat grilling.

If I recall correctly the above HUGE steaks required 3-3-7-7. They spent quite a bit of time on the indirect side of the grill! Understandable, they are gigantic t-bones !

My general way to do steaks is to purchase a 1 inch thick steak. I will then sit the steak out at room temperature for 30 minutes. My grilling plan is then 3-3-3-3.

This results in a perfectly cooked medium rare steak. If you want to mess around with this method start here and then make modifications as you see fit.

How to cook steak on a Weber Charcoal Grill

In the video below, Malcolm Reed of HowtoBBQRight breaks down his step by step guide to grilling a perfect, medium rare steak every time.

Lets get the rundown.

1. Apply Seasoning to your Steak

The first step is to apply a little seasoning to your steak. Malcolm recommends his All Purpose seasoning that is comprised a mixture of salt, pepper, and garlic.

These are classic steak seasonings that will always go well. If you dont have access to Malcolms AP Seasoning, simply apply a little salt, pepper, and garlic of your own.

2. Light Charcoal

Since you have to wait an hour for your steak to dry brine, it doesnt make sense to light your charcoal until after you have seasoned your steak.

Load up your charcoal chimney and light a fire starter underneath it. Once your charcoal is ashed over completely, dump it into your grill.

You have a couple of options for how you are going to place your charcoal, depending on the equipment you have on hand.

If you have a set of GrillGrates , you may choose to dump your charcoal in the center and space it evenly throughout your grill.

Otherwise you may simply choose to bank your charcoal to one side of your grill. This way youre able to sear over direct heat as per the below instructions.

If your steak is not finished you can lay it on the cool side away from direct heat and avoid burning your steak.

    What I Consider Medium Rare

    Finally it is important to note that steak doneness is also an important variable. The rule of threes as I discuss is tuned to give you a medium rare steak.

    Note that in the above cell phone picture that this ribeye is what I consider medium rare. Red almost pink throughout with no sign of gray.

    So lets put all these variables together and learn how to modify them as we need to. How does this apply to cooking a really thick steak?

    Well the best example I can think of is a thick filet mignon medallion. These steaks are normally 2-3 inches thick. Will the rule of threes work? The answer is YES! But it is a modified rule of threes.

    The one rule that I think should not be altered with the rule of threes is the three minutes of direct heat on each side of the steak.

    When I cook over a high heat any more than 3 minutes on each side looks too burnt to me. Three minutes is just right for nice grill marks and a good char.

    If the direct heat variables are locked this means that only the indirect times can be extended.

    For a 2-3 inch steak the rule of threes will be modified to 3-3-4-4 or maybe even 3-3-5-5.

    The extended indirect grilling time cooks the inside of the steak while not burning the surface of the steak.

    What Temperature To Grill Steak On A Gas Grill

    The worst kind of steak is a burned steak. Grilling steak on a gas grill doesnt have to be complicated but the mistake most people make is relying on steak cooking time alone without considering the temperature. Since gas grills are meant for fast and hot cooking, it is essential to maintain temperature control when grilling steaks to avoid the dreaded burned and charred steak.

    Prepare Your Weber Kettle

    I like grilling this steak over direct high heat.

    Completely fill a standard charcoal chimney with briquettes and light the charcoal. Once flames are shooting out the top of the chimney, dump the charcoal into the center of the charcoal grate. Use your tongs to arrange the charcoal around the middle of the grill.

    Keep the top and bottom air vents of the kettle completely open to get the coals as hot as possible.

    WEBER PERFORMER KETTLE WITH GBS GRILL

    Start with two 1 1/4 – 1 1/2″-thick boneless ribeye steaks. Hint: go to a butcher, not a grocery store, and get them to cut your steaks the thickness you want.

    Two hours before grilling time, put steaks on a rack in a glass cake pan. Sprinkle both sides of steak generously with kosher salt and put in fridge. This is called dry brining.

    I flipped these after 45 minutes. Notice the glossy sheen? The salt draws out the moisture from the meat. Then, as the moisture draws back into the meat, it pulls some salt along with it.

    Fresh ground pepper, and these are ready to go on grill.

    In a 2-zone setting, direct heat goes on one side of grill and indirect on the other. In this case, hot coals on 1/2 of Weber kettle and a water pan and no coals on other half.

    Grate temperature directly over coals is 660 degrees Fahrenheit. Over the water pan it measures about 240 degrees.

    I’ll cook the steaks indirectly to 115 degrees Fahrenheit before moving them directly over the coals to finish the job.

    Once the steaks reach 115 degrees, pull them out of the grill. Then, pat them dry and brush on rendered beef fat or vegetable oil.

    This keeps the steak from sticking to the high-heat grate.

    Once your steak reaches between 125 and 135 degrees Fahrenheit , take them off and let them rest.

    This steak turned out great. VERY tender in the middle and a nice crust around the outside.

    How Do You Sear A Ribeye On The Grill

    Place the steaks on the hot grill to sear. Dont move them for 2-3 minutes. If you want diagonal hatch marks, you can rotate your steak 45 degrees after a couple of minutes and then finish searing. Use the tongs again to flip steaks and sear the other side.

  • How to Cook With an Infrared Burner on a Gas Grill
  • Americas love affair with grilling began right after World War II, according to Born to Grill, and based on the proliferation of grills available, it appears that the feelings havent waned. In 1952 an employee of Weber Brothers Metal Works took advantage of Americas passion and created Webers first grill. Weber introduced the Genesis gas grill 30 years later with an innovated system of metal bars to distribute the heat evenly. The Weber Genesis gas grill requires proper timing and correct temperature to achieve your favorite degree of doneness in your steak.

    Move the Genesis grilling grates so they sit 4 inches above the burners. Spray the grates with a light coating of vegetable oil cooking spray.

    Check the control knobs on your Weber Genesis gas grill to confirm they are in the Off position. Turn the gas cylinder valve counterclockwise to supply gas to the grill.

    Turn the middle or front burner knob to Start/High. Press the electronic igniter button or use a barbecue lighter to light the burner on your Weber Genesis grill.

    Turn all the burner knobs to High and close the lid on the Genesis grill. Allow the grill to preheat for 10 to 15 minutes.

    Cook over high heat for 10 minutes for steaks 1 1/4-inch thick and thicker. Cook over medium heat for 4 to 5 minutes for steaks less than 1 1/4-inch thick.

    Checking Steak Doneness Based On Internal Temperature

    The internal temperature is critical to cook your steak to the desired doneness you want. The internal temperature is recorded in the thickest part of the steak and you should absolutely use a probe meat thermometer to check your temperature readings.

    Remove the steak from the gas grill 5°F before it gets to the ideal internal temperature you have in mine because the internal temperature will continue to rise while the meat is resting. Here are the internal temperatures you need to have for your steaks.

When it comes to grilling steaks there are only two real options for doing it, one is using a propane grill and the other is to use a charcoal grill. Propane is a good option but if you dont have it, charcoal is great for people who dont want to spend that much money or for tailgating. Although I prefer to use charcoal grills because it will give your steak a more smoky taste to it that you cant get from a propane grill.
