How To Make Chicken Fried Steak And Gravy:

For the steaks: If your cubed steak is more than ½ thick, youll want to pound it out until thin. This will provide additional tenderizing as well as allowing for more even cooking. Season cubed steaks lightly with salt and pepper.

On a plate, place ½ cup flour – set aside. In a shallow bowl, mix remaining ½ cup flour, saltine cracker crumbs, seasoned salt, garlic powder and cayenne pepper.

In another shallow bowl, whisk together eggs and milk.

Dredge cubed steak in flour.

Then dip it in egg mixture.

Finally coat the steak with saltine cracker mixture.

Continue the same procedure for the rest of the steaks and place them on a large baking sheet.

Heat vegetable oil or shortening in a large pan over medium heat until oil reaches a temperature to 350 – 375F degrees.

Cook steak in 2 batches. Continue with the rest of the steaks. Remove steaks to a paper towel-lined baking sheet to drain excess oil.

For the sawmill gravy: Once steaks are finished cooking, remove excess oil from pan and add flour to pan Whisk and cook over medium heat for 1 minute.

Gradually whisk in milk and cook until thick.

Whisk constantly and season to taste with salt and freshly ground black pepper.

Pour gravy over steaks.

Serve with mashed potatoes and your delicious creamy gravy!

Early Expansion Franchising And Sale


The company had four restaurants by the time of Church Sr.s death in 1956. After his death, family members took over operations, and in 1962, with Church Sr.s son Bill Church Jr. as top executive, there were eight restaurants in San Antonio. To begin expanding and franchising in 1965, Church Jr. and his brother Richard developed a signature marinade that could be prepared at any location. Former vacuum cleaner salesman J. David Bamberger, who first met Church Jr. when he joined Bambergers vacuum cleaner distributorship, joined Churchs Chicken in 1965 to oversee the franchising. By 1967, the chain opened restaurants in five Texan cities outside of San Antonio and operated 17 restaurants in 1968.

In 1966, a contract between Churchs Fried Chicken, Inc. and Jim Dandy Fast Foods, Inc. gave Jim Dandy the right to use the trade names and trademarks Churchs Fried Chicken or Churchs within fifty miles Houstons city hall and within the city limits of Galveston, Texas for ten years, as long as Churchs Chicken received the agreed upon royalties.

In 1968, the Church family sold the company, which became incorporated and went public in 1969. By the end of that year, there were more than 100 Churchs Chicken restaurants in seven states, making the chain the first from Texas to become a national one. Churchs Chicken gained 387 more restaurants between 1969 and 1974.

In 1980, Church Jr. resigned as corporation chairman and was replaced by childhood friend Roger Harvin.

Although I was raised on KFC , my residence in Texas has led me to change my fast food fried chicken franchise allegiance to Churchs Chicken. While neither can compete with the divine fried fowl I have sampled at Willie Maes Scotch House, I appreciate Churchs version for its moist meat and thick, not over-salted batter at a very low price point.

Thus when afforded the opportunity to review Churchs foray into chicken fried steak territory, I responded with an enthusiastic Hallelujah. Since many food historians claim CFS originated in the Lone Star State, Churchs recently launched this special as an homage to the restaurants Texan roots. Further sweetening the deal was their offer to deliver my chicken fried steak to my workplace in the medical center, so I could use it to fuel me through a particularly intense session in the OR.

And by OR I mean, orthography room, aka my office, because, well, Im not a real doctor.

Nevertheless, I know my MD colleagues were beside themselves with envy when my chicken fried steak arrived piping hot from the arms of a handsome gentlemen in a black Mercedes. Well, I can only assume they were since they were still in the hospital saving peoples lives or something.

Hi there, Jess in the Rada Kitchen, thanks for joining me. Today we are going to whip up a versatile dish that you can make for breakfast or for dinner. This is the classic chicken fried steak, and we are going to top it with that delicious gravy and were going to start by seasoning up our meat.

So here we have a couple pounds of cube steak. This has already been tenderized, its thinned out. Were going to season this. Ive got our Rada Burger & Fry Seasoning. And then Im going to add some paprika and a little bit of thyme leaf. Flip it over and do it again. Were going to start cracking our eggs for our egg wash. And I have four here.

So were grab out meat here and were going to start by drudging it in our flour. This is going to help the egg adhere. And then its going to be super crispy once we fry it up in the pan. A good coat, shake it off. Into our egg mixture. And then back in our flour. So I have some oil in my pan and I have this warming up over medium-low heat. Im going to go ahead and drop this in. And you can do one or two at a time. You can even get a couple pans going at once if you want to. Its going to fry for about eight to ten minutes total, and well flip it when its halfway done.

We have our crispy chicken friend steak, and were just going to coat this with gravy.

What is cube steak?

Depending on where you live, this cut of meat is called cube or cubed steak. It is usually a round steak that has been run through a mechanical meat tenderizer and you’ll see tiny little holes punched in it

All I can find are really thick cube steaks, will this still work?

Sometimes, even after it is tenderized, it is still thick. If that is the case, you are going to want to pound it down until it is thinner so that it cooks quickly and evenly.

Do I have to use shortening or lard?

I really prefer to use shortening to fry these – it really deepens the flavor – but regular peanut or canola oil works fine too.

What other seasonings can I use?

Salt and pepper are key. It sounds silly but to really get a super tasty white gravy, you need to season it really well. So add a little, then taste. Add a bit more, then taste. Keep doing this until it is just right and not bland. The cayenne pepper adds a touch of heat. You can also use cajun seasoning for a bigger pop of flavor.

Deliciously Fried Cube Steak

Before I get into this recipe, let’s first explain exactly what this meal entails. It is a cube steak that is coated in basically the same type of mixture that you would use to coat fried chicken – hence the name – Chicken Fried Steak. It is then fried in shortening, lard or oil.
