The amount of time that it will take to cook your steak depends heavily on how well done you like your steak. If you like your steak served rare, then it will take significantly less time to cook than a steak that needs to be well done.

Generally speaking, it will take around 12-15 minutes to cook a steak on a pellet grill. This is based on the assumption that your grill is set to 450 degrees Fahrenheit. If you choose to cook at a lower temperature, then it will take longer for your steak to cook.

As long as your grill was preheated, and you keep the lid down on the grill, then your steak should cook in no time. But remember to keep an eye on the temperature throughout.

Finishing With A Sear

As soon as your steak reaches its target internal temperature, take it off the grill, cover it with foil, and crank your pellet grills temperature as high as it goes. Heres where you need to be patient. Dont be afraid to wait 10 minutes for your grill to get up to its max temperature. I promise your steak will be fine while you wait for the temperature to rise! Ideally you are looking for your grill to get up into the 450°-500° range.

Once your grill is ripping hot, put your steak back on for 90 seconds per side. Keep the lid closed to keep the grill hot. You can turn your steak halfway through each side and move it to a different part of the grill to get criss-crossed marks, but try not to get too obsessed with these marks. Instead focus on overall browning from the Maillard reaction. After searing, both sides, youre done! Since the internal temperature was brought up slowly, theres really no need to rest your meat, but a couple of minutes wont hurt.

TIP: Place your steak near the front edge of the grill when searing. This is an area where a ton of heat escapes around the diffuser plate.

This Reverse Seared Steak was cooked on my Camp Chef Woodwind Pellet Grill. The thing that made this Reverse Seared Steak better than cooking it on a normal pellet grill was that I was able to Sear the Steak off using the Side Sear Box that is available on the Camp Chef Woodwind Pellet Grill. Reverse Searing is definitely the best way to Cook A Steak in my opinion, whether you are cooking on a Charcoal Grill, Pellet Grill, or even in the oven.

How I Reverse Seared This N.Y. Strip Steak on the Camp Chef Woodwind:* I seasoned the Steak with Salt and Pepper and let it rest for about 30 minutes.* After the Steak Rested for 30 minutes I put them in them in the smoker on 225 degrees.* When they hit 114 degrees internal temperature I removed them from the grill and let them rest while the sear box came up to temp.* When the Camp Chef Side Sear box was screaming hot I grilled them for a about 45 seconds, then turned 90 degrees and grilled another 45 seconds, then flipped again and repeated.****This is something that you need to play by ear. The timing may be different each time you cook a steak******* After The Steak was Seared I let it rest for about 15 minutes before cutting into it.

How To Know When Your Steak Is Done

There are a lot of different ways to know when your steak is ready to come off the grill, but the most reliable way is to use an instant-read thermometer.

I use a Thermoworks Thermapen MK4, and I love it. The temperature readout is almost instant. Anytime I make steaks I get a quick internal temp readout using my Thermapen after 45 minutes of taking on smoke, and then after the first flip.

I pull my steaks at 125 degrees for medium-rare, and I pull my wifes steaks at 140. The Thermapen makes it easy to know EXACTLY what the temp is.

Do You Flip Meat On A Pellet Grill

No, generally speaking, you do not flip meat on a pellet grill. Both grills and smokers come with a lid, and you should avoid opening this lid while the meat is cooking. If you do open the lid, then this will affect the heat of the grill and, in turn, affect your meat.

When you cook meat on a grill, it is advised that you do so on a low heat for a long period of time. Slowly cooking the meat will result in a better, and tastier, finish. But, when you are dealing with low temperatures, they will be more at risk from outside forces. Such as opening the lid.

So, while you might feel like you should flip your meat when cooking it on a pellet grill, you shouldnt do this. Instead, trust the process and wait for your meat to cook.

Tips And Tricks For Heat Searing On A Pellet Grill

When you are preheating your pellet grill, make sure you set your grill to the smoke setting. Keep the lid open and monitor the flame. Once smoke forms, you can shut the lid, wait about 10 minutes and you are ready for searing.

Under this method, it is recommended that cast iron is used against steak for even cooking and searing. Poke into your steak to see the center. This method results in rare centers, but make sure the meat is cooked the entire way through.

  • On a three or more burner grill, turn on one burner to low or medium low heat.
  • Place wood chips in a foil pouch on the grill grates over the flame.
  • Place meat on indirect side. Close lid. Try to keep the temperature of the gas grill under 250 degrees, its tough as they have a lot of venting, so adjust your flame as needed. When the meat internal temperature reaches 110 degrees, you can remove the foil wood pouch.
  • Next, crank up heat to high and finish with that sear.
  • Remove when internal temperature of meat is to your desired doneness.

What Is The Filet Mignon Reverse Sear Method

Filet mignon is one of the thickest cuts of steak, so it can be one of the trickiest to cook. Its tough to get the internal temperature just right without having to keep poking the insides with a meat thermometer and letting the juices escape.

For even better results, refrigerate the steaks uncovered overnight to dry out their exteriors.

Which Wood Pellets Are Best For Steak On The Pellet Grill

When I cook steak, I typically stick to either Hickory, Mesquite, or Pecan. Hickory and Mesquite are on the stronger end in terms of smokiness. Steaks are very beefy and strong cuts of meat though and hold up very nicely to strong smoke flavor.

If Im looking to mix things up Ill go with pecan. Pecan is an under-appreciated wood type for grilling and smoking in my opinion. Its just a tiny bit less strong on the smoke flavor compared to hickory but has a vanilla and nutty finish that adds some fantastic layering and complexity to steaks flavor profile.

I know many people who also use Oak wood pellets for steak and rave about the results. Oak is also a great choice, I just personally dont use it for steak.

What If I Only Have A Smoker And No Grill

If you have a hard time getting your smoker to a sear temperature, have no fear. Just finish it on a cast iron pan over high heat. Get the cast iron pan hot, you know its hot enough when you add extra virgin olive oil to the pan and it is slightly bubbly and smoking just before you put the steak on. Sear each side for 2 -3 minutes or until the steak comes to the temperature you like.

How To Reverse Sear A Steak On A Traeger

First, get your grill preheated to 225°.

Rub down your steak with seasoning, and then toss on the grill for a while and let it cook slowly. You want the steak to get to about 10-15 degrees under your desired finished temp. More on that below.

When you are ready to turn up the heat, remove steak from the grill, crank it up to high, and allow the Traeger to reach temperature. Toss the steaks back on the grill to give it that crispy sear that will lock in flavor.

What To Do After Cooking Reverse Seared Filet Mignon

Your filet mignon is almost ready to dig into. After using the reverse sear method to crisp up the outside of the filets, transfer the seared steak to a cutting board or plate tented with foil. Allow to rest again for 5-10 minutes to let the steaks juices absorb back into the meat.

Then, the choice is yours. Add a sprinkle of steak seasoning and kosher salt, if desired. Or, add a pat of herbed or garlic butter to the top of each filet just before serving. Most importantly, enjoy!
