Taking Off The Chill Speeds Up Cooking

How to Grill T-Bone Steak | Recipe

The goal of grilling a steak is to brown and lightly char the surface while also cooking the interior to a perfectly juicy doneness, right? If the steak is too cold, the interior might require so much cooking time to reach that perfect doneness that the steak overcooks deep below the surface, turning gray and dry.

Let your steaks stand at room temperature for 20 to 30 minutes before grilling. They will cook faster all the way to the center and stay juicer.

Why I Wrote This Recipe

Ive been helping a lot of people create delicious steak dinner recipes at home for a while now. Serving up a big juicy steak or two with a few tasty side dishes is my idea of a perfect, easy date-night-in.

Personally, I love experimenting with impressive cuts of beef like this one, air fryer filet mignon, tri tip, sous vide NY strip steaks, and sous vide porterhouse which was featured in my cooking segment on Oregon Home.

So after a trip to the toy store for my toddler , we headed over to the adult toy store with my husband no, nothing you might be thinking of Im talking about the butcher case at the gourmet grocery store. AKA the toy store for foodies. We decided to pick the first thing that caught our eye and on that particular night it was this t bone beef steak.

Some of these recipes we cook over and over and over again are the LAST ones to make it on Sip Bite Go. Some of them Ive perfected and glued to my memory bank, but never take the time to write down. For instance, Ive been cooking perfect scrambled eggs since I was 12 and just posted them this year.

And, now Im deep into my 30s, friends!

With the weather in Portland being perfect that particular steak dinner evening, and the light for recording just right, we decided to film this video for t bone steak in the oven and write it up. Most of our inspiration is impromptu like that.

Salting Early Pays Off

You might have heard the warning that you shouldnt salt meat too far in advance of cooking because it can draw out moisture. Its true that salt draws moisture towards itself, but over the course of 20 to 30 minutes thats a good thing, because the salt begins to dissolve into that little bit of moisture.

When the steak hits the hot cooking grate, the sugars and proteins in the moisture combine with the salt and other seasonings to create a delicious crust. Any moisture you might lose is well worth the flavor of that crust.

What Is A Good Size T

When it comes to T-bone steaks, size does matter. But how big is too big? And how small is too small?

Heres a handy guide to help you choose the perfect size T-bone steak:

If youre feeding a group of people, go for a larger size steak.

If youre cooking for two, a smaller size steak will do. It weighs about 600 grams and is about 5 cm thick, perfect for two servings of steak. It takes time to bake because it has bones and thickness. This hearty and delicious meat belongs on the grill or on the grill.

If you want leftovers, choose a medium or large size steak.

So there you have it! Now you know how to pick the perfect size T-bone steak.

Make The Compound Herb Butter

Chipotle

Making compound butter is so easy, and such a great way to add flavour to your steak. This one is pretty simple – we’re going with cilantro, parsley, and garlic.

Start with softened butter Add 2 tablespoon of fresh, chopped cilantro, 2 tablespoon fresh, chopped parsley, and 2 diced cloves of garlic. Mix well in a small bowl.

Prepare a piece of plastic wrap on a smooth, clean surface. Place your butter on the wrap, and using the wrap, form it into a log shape. Roll until smooth, twisting the ends. Refrigerate for one hour. When ready to serve the steak, cut butter into discs about 1″ thick, and place on top of the steak, allowing it to melt.

What Is A Good Price For T

How much is a good price for a T-bone steak? This is a tough question to answer, as it depends on a lot of factors. Are you looking for cheap T-bone steaks, or are you willing to pay more for a higher quality cut of meat? Here are some things to keep in mind when deciding how much to spend on a T-bone steak.

First, consider the quality of the meat. A higher quality T-bone steak will be more expensive, but it will also have better flavor and texture. If youre looking for a cheap T-bone steak, you might be able to find one at your local grocery store. However, these steaks will likely be lower quality and not as tasty.

Second, think about how youre going to cook the steak. If youre planning on grilling or frying it, youll probably want to spend a bit more on a higher quality steak. However, if youre just going to throw it in the oven, a cheaper steak will do just fine.

Finally, consider how many people youre feeding. If youre cooking for a large group, youll need to buy more steaks and thus spend more money. However, if youre only cooking for yourself or a small group, you can get away with buying fewer steaks.

In general, a good price for a T-bone steak is between $10 and $20 per.

There is nothing like cutting into a high-quality steak seared to perfection on the grill. A T-bone is a great choice for grilling and doesn’t require a lot of preparation. The key to a good T-bone steak is to season it in advance, then cook it indirectly before searing it. Cook the steak to the desired temperature and let it rest so it stays flavorful and juicy.

Choosing The Right Cut

Dry-aged, wet-aged, USDA Prime, Wagyuhave you noticed all the labels a T-bone steak can come with? Dont feel overwhelmed. Any of these options indicates a high-quality steak that, when grilled correctly, should yield an excellent texture and taste.

Dry-aged and wet-aged refer to the aging process that takes several weeks to enhance flavor and texture. Wet-aging is usually faster, but dry-aging has a bit more time to break down tough fibers to tenderize the steak.

The USDA marks USDA Prime steaks as meeting marbling and color standards, denoting high-quality steaks. Wagyu is among the most prized for T-bone and other steaks, with a similar quality to traditional Japanese Kobe beef.

No matter what type of T-bone steak you choose, try to go with a cut thats at least 1 ½ inches thick for grilling. Thinner cuts may be more challenging to prevent from overcooking on the grill.

How To Season T Bone Steak

Best Way To Cook T Bone Steak On Grill

This is a relatively flavorful cut of meat and while it can take some good seasoning, it doesnt need much.

For this t bone steak recipe I only used Himalayan Salt and freshly cracked black pepper. This is all, not even oil, since the steak is marbled and does not need any oil. Also when there is no oil or marinade, the steak sears nicely on the grill and there are less drippings, which prevents burning the steak.

Any steak seasoning of your choice can be used to season raw t bone steak, no matter if it is store bought or homemade.

I did melt some butter and added a minced garlic clove and some crushed red pepper to it and drizzled the butter over the cooked steaks, which made them extra delicious.

What Cut Of Beef Is T

The T-bone steak comes from the short loin of a cow, sitting behind the ribs and in front of the sirloin sections. The T-bone is cut in a way that it has both tenderloin and strip steak surrounding its bone on either side. The tenderloin portion is the same part of the cow that the deliciously delectable filet mignon comes from.

Should Steak Come To Room Temperature Prior To Grilling

No. There is a debate as to whether you should have your steaks come to room temperature prior to grilling. The idea is that it allows the steak to warm and sear better. Frankly you will get a negligible change in the internal temperature by letting them rest and increase the likelihood of foodborne pathogens.

The Reverse Sear Version 2

Serious Eats / Joshua Bousel

With the last of my three porterhouses, I went with the reverse sear again, but this time positioned the strip to run parallel to the fire, with the tenderloin facing away from the coals. As I monitored the temperature this time, the tenderloin was coming in at least 5°F cooler than the strip, which was exactly what I wanted to see.

Serious Eats / Joshua Bousel

After letting the steak roast until the strip hit 115°F and the tenderloin was at 110°F , I quickly seared it off, let it rest, and cut in.

Serious Eats / Joshua Bousel

This time around, the strip was perfectly medium-rare from edge to edge. The more delicate tenderloin still had a little grayness around the sides, but to a lesser extent than in my previous attempts, making this method the clear winner.

Cleaning And Seasoning A Plain Steak

  • 1Trim the extra fat and pat the steak dry. Set the steak down on a cutting board and slice excess fat off its outer edges. Leave at least 14 in of fat on the steak for flavor. Then, blot any remaining moisture off of the meat with a few paper towels.XResearch source
  • Excess fat melts in the heat and drips into the grill, sometimes causing a flare-up. To avoid this, plan on cooking the steak away from direct heat with a drip pan under it. Then, finish the steak quickly over direct heat.
  • Any moisture on the steak turns to steam, which cooks the meat and affects the sear.
  • 2Season the steak with salt at least 40 minutes in advance. Cover both sides of the steak in a thick layer of about 1 teaspoon of kosher salt. Adding the salt so far in advance draws the flavor out of the steak. The salt draws out the juices, which the steak reabsorbs before you cook it.XResearch source
  • If you don’t have time to wait, season the steak right before cooking it. That way, the steak’s fibers won’t have enough time to release juices. Unless you put the steak on the grill right away or wait the full 40 minutes, your steak will lose those juices as it cooks.

    Instructions To Cook T

Allow the steak to come up to room temperature. This will make it cook more evenly and faster and help prevent overcooking.

If desired, season the steak with salt and pepper before cooking.

Place the gas grill on medium heat or low heat . You can also use a charcoal grill set-up for indirect heat.

Sear each side of the steak for three minutes, then flip and cook two additional minutes per side for medium-rare.

Remove the steak from the grill and allow to rest for at least five minutes before serving.

Do You Need To Marinate A T

    Grilled T Bone Steak Recipe

Normally marinating is used to tenderize tougher cuts such as flank steak or sirloin tip. As T-bone is already a tender cut, I use simple seasonings instead of a marinade.

Just pat dry with paper towel, rub with olive oil and season generously with salt and pepper. This simple seasoning wont overpower the steaks natural flavors!
