How To Shop For The Perfect Steak Usda Prime Marbling And More

How to buy the best steak for your money, what cut to choose, what does each cut cost, does USDA Prime beef really worth it?

Shopping for steak can be sometimes tricky. It doesnt matter if you buy your steaks at the supermarket or your local butcher shop, theres just too many options that the whole process might be a bit tedious, but nothing can beat a well-marbled steak on the grill so it is definitely worth the hustle!

Today to satisfy our audience curiosity, and find out the answers to these questions, we took a deep dive into the subject.

How To Buy The Best Beef

Consult our expert guide to selecting the most nutritious, flavorful, and versatile cuts of red meat. Here’s what you should know before you buy.

Americans love beef we eat nearly 63 pounds per person each year. Although thats a lot, the amount is down from our 1976 high of 89 pounds. When buying beef, we tend to stick to what we know, which may be why almost 60 percent of our beef dollars go for ground beef. Even as an experienced chef, I often brought home familiar cuts. But researching my book, Field Guide to Meat, led me to expand my repertoire to tasty, if less familiar, cuts like hanger steak and tri-tip. Soon you can do the same, knowing which cuts to choose for maximum flavor and nutrition.

What About Angus Steaks

Certified Angus is a term that youll often see in restaurants or grocery stores, but stated simply, it refers to a specific cattle breed, not a quality grading. Angus or Aberdeen Angus is a breed of Scottish cattle that is smaller than the typical American cattle. As it is a breed and not a grading, Angus steaks can be graded under the USDA system discussed above, just as is the case with non-Angus beef. The breed has been around in the US for quite a while the American Angus Association was founded in Chicago in 1883, though interestingly, it took them until 1978 to come up with the Certified Angus beef standard. The purpose behind this certification was simply to promote the idea of a higher-quality beef. In order to meet the Certified Angus standard, the cow in question must be 51% black in color and exhibit Angus influence, which includes simmental cattle and cross-breeds. Other necessary criteria include higher-than-average marbling, a carcass size of under 1000 pounds, and a certain hump size.

Which Grocery Store Has The Best Steaks

Tips to buy supermarket steaks. Most of the bad reputation that supermarket steaks have earned is because of the lack of a standardised meat quality. You may have noticed that even though you buy steaks from the same cut of beef, pork or lamb, their appearance and post-cooking results are not always the same.

Hanger steak is extremely flavorful and can be very tender when cooked correctly. As it has naturally long muscle fibers and a slightly coarser texture compared to other cuts, it can shrink back when cooked for too long. This cut of steak is best for cooking over high heat for a short period of time. Think grilling and broiling.

How Do You Pick A Steak At The Grocery Store

Tips for Buying Steak at the Grocery Store

While steak from the local meat market may be the better option for purchasing steak, sometimes is just not possible.

Meat markets are becoming a rarity. If you do happen to have one nearby, its going to mean an extra trip and extra time shopping.

Sometimes its just more convenient to do all of your shopping, including meat, at the supermarket.

So, how do you pick a quality steak at the grocery store?

Best Gift Sets: Chicago Steak Company

Send an assortment to a steak lover by way of a Chicago Steak Company gift set. They’re are available for all budgets, free shipping is often included, and theyre shipped frozen, so the recipient doesnt have to cook them all right away. The Chicago Steak Sampler is a customer favorite and includes two filet mignons, two ribeyes, two flat irons, two top sirloins, and 16 steak burgers.

All steak offerings are either USDA prime or choice, which are the top two grades for beef based on fat marbling. Prime steaks have the most marbling, so they cook up with the most flavor and juiciness. Choose a gift set that has been wet-aged for maximum flavor.

For the best steak experience, you want to make sure you have the right kitchen gear and cooking know-how to enjoy your steaks to the fullest. Many online butcher shops feature free recipes and cooking tips, so be sure to keep an eye out for those to make the most of your purchase.

Steaks can be grilled, pan-fried, or broiled in an oven. A cast-iron pan is useful for searing steaks on the stovetop and finishing in a hot oven. A food thermometer will help you ensure your steak is cooked perfectly to suit your preferences.

Look For The Right Cut Of Steak

This is a highly subjective topic, but its generally agreed that the tenderloin is the most tender cut of steak. That being said, its not my personal favorite. Because its super lean, it can dry out if youre not careful!

When youre going all out, we recommend picking up a Prime ribeye or New York strip. Theyre the easiest steaks to cook because of their high levels of marbling, which build in a lot of forgiveness in case you accidentally overcook them.

Any 1-inch-thick steaks cut from the short loin or sirloin are also fantastic choices for the grill when youre on a budget. Thinner steaks from the plate tend to be tough but have a beefy flavor, and they grill up just fine if you marinate them.

I wouldnt recommend grilling steaks that come from the chuck, briske, or round. These tougher cuts are inexpensive, but theyre better suited for low-and-slow cooking methods.

What Are The Usda Meat Grades

The United States Department of Agriculture grades meat at the request of the meatpacker.

The grading system determines the quality rating based on the amount of marbling in the muscle and the age of the beef.

There are generally three USDA grades of beef that you would buy from the supermarket. From highest to lowest, they are:

  • Prime
  • Select

The highest quality of meat is USDA Prime.

It is the most tender and flavorful cut of meat. It is also hard to find and usually reserved for high-end restaurants. You may be able to find it at the supermarket occasionally but at a premium price.

In short, the higher the ratio of marbling, and the younger the cow, the higher the grade.

The marbling determines the tenderness, juiciness, and flavor. Younger beef produces a finer texture, making it more tender.

The second-highest grade is Choice.

It has less marbling and is generally less tender. Less marbling also means less flavor and juice.

USDA Select is the lowest grade of steak youll find at the supermarket.

It is very lean and tougher than other cuts.

USDA Cutter and Canner grades are meats that are typically found in convenience foods, like microwave burritos, pot pies, and other processed food products.

When shopping for steak, be sure to look for the USDA shield.

Many grocers will mark packages as prime or choice, but unless it has the USDA shield, its most likely a marketing ploy.

What About Japanese Beef

Given that these terms have also risen to greater popularity in recent years, lets aim to answer the question of what characteristics are displayed by Kobe and Wagyu beef, and whether or not these Japanese cuts are worth your money. Stated simply, Kobe is a Japanese black cattle breed more specifically, one of the Tajima substrain. It is fed on grain fodder, with a feeding period which is considerably longer than in the US . Kobe beef also has a much higher degree of intramuscular fat, the melting point of which is also much lower by comparisonmeaning that when you eat it, it melts in your mouth like butter.

A marbling guide to Japanese steaks.

Authentic Japanese Kobe beef at the Wynn

In our experience, Kobe beef is so fatty that you really dont need more than two to three ounces per serving personally, I once had it when I was in Japan, and its an entirely different experience from an American steak. I wouldnt even call it the same thingits really more like flavorful butter rather than the steak experience that youre used to. So, should you buy the American Wagyu or Kobe beef that is advertised all over the place? Just keep in mind that its a crossbreed, and while it usually results in a higher amount of fat, its not regulated, so you really dont know what youre getting unless you can trust the source.
