About Our Chef: Michael Mina

Born in Cairo, Egypt, and raised in Ellensburg, Washington, Chef Michael Mina has enjoyed a love affair with the kitchen, creating memorable dining experiences for guests from a very early age.

Chef Minas epicurean journey began in 1987 at the Culinary Institute of America in Hyde Park. During those 18 months of formal schooling, he spent his weekends sharpening his natural talents with hands-on experience in Charlie Palmers kitchen at the upscale Aureole in New York City.

At the start of his career, Chef Mina was presented with the opportunity of a lifetime with then-executive chef of the Bel Air Hotel in Los Angeles, Chef George Morrone. The two were asked to develop a concept and create a menu for an upscale seafood restaurant in San Francisco the city Chef Mina had dreamed of calling home one day.

Welcomed to San Francisco by a major earthquake his second day in the city, he was unfazed and went to work immediately under Chef Georges direction. Chef Mina dedicated himself to creating a complete dining experience training the entire kitchen staff personally and refining the menu as chef de cuisine. AQUA opened to rave reviews and national acclaim in 1991. Chef Mina served as AQUAs executive chef from 1993 to 2002, where he was awarded Rising Star Chef of the Year in 1997 and Best California Chef in 2002 by the James Beard Foundation.

With locations in Las Vegas and Sacramento, Echo & Rig in Las Vegas sits just 15 minutes away from the Strip. This isnt the traditional steakhouse in look or menu. They moved away from dark colors and leather to embrace the airy style of a butcher counter with glass, metal, and wood to showcase meat.

Another untraditional touch, Echo & Rig, even offers my preferred but less known cut, the Spencer Steak, a rich cut similar to a rib-eye but with even more flavor. Give it a try. Pair it with small plates like pork belly burnt ends, various vegetables, or have some surf with your turf.

Bazaar Meat, located in the Sahara hotel, is the brainchild of James Beard award-winning chef José Andrés. He set out to conquer meat, and the menu shows it with many different variations. This restaurant is a love letter to carnivores with three categories of steaks organized by size from small guys to big guys.

However, if you want to experience meat heaven as I did, take a trip through Japan with their different types of traditional Wagyu and Kobe beef. Dont miss out on the cotton candy foie gras, one of the small ways Bazaar Meat shows it doesnt take itself too seriously.

Where To Find A Cheap Steak In Las Vegas On The Strip And Downtown

High-end dining options and celebrity chef restaurants seem to get all the love in Las Vegas. Social media is constantly abuzz with images of fancy meals, and gourmet steaks. While steaks at top-tier restaurants are assuredly fantastic, they are out of the preferred price range of many budget travelers to Vegas. Lost in the fawning over expensive dinners is the common man or woman looking for a steak thatll do the trick without breaking the bank.

We thought it would be fun to compile a list of mediocrity. A list of cheap steaks that wont break the bank both on the Strip and downtown. To qualify as cheap, steaks needed to be at a $25 price point or below. As you would expect, steak deals are a touch better in downtown Las Vegas than those found on the Strip.

Hank’s is the only steakhouse in Henderson to serve certified Kobe beef.
